No Thanksgiving table is complete without a good, fragrant gravy. If you aren’t cooking meat first or just want a simple, meat-free option, this Simple Vegan Gravy recipe is bursting with flavor and is so easy to prepare. A lot of vegan gravies require complicated ingredients, but this one uses just six items you probably have in your kitchen right now.
The key to this recipe is cooking the onions low and slow. Cooking onions on low heat allows them to slowly soften and release their flavor. If you cook onions on low long enough, they begin to caramelize. While you don’t need to fully caramelize your onions here, the rich, slightly sweet flavor will come through in your gravy if you let them cook slowly for about 15 minutes.
I tried this Simple Vegan Gravy on top of some Easy Baked Tofu, cut into slabs, and it was incredible.

What Makes Simple Vegan Gravy Revolutionary?
This recipe is totally meat-free and uses ingredients you likely have on hand. You can use whatever seasonings you like. For Thanksgiving, I recommend some combination of parsley, sage, rosemary, and/or thyme. I used fresh rosemary and parsley, which were in my fridge from other recipes (Holiday Vegan Stuffing and Chickpea Smash Sandwich).
Using up ingredients you already have is a great way to reduce waste. Additionally, if you have extra seasonings after cooking, throw them in a bag or container in your freezer. Add veggie scraps from cooking (onion peels, potato skins, carrot tops, etc.) over time. When you have a couple of cups of scraps, make a homemade veggie broth!

Simple Vegan Gravy
Ingredients
- 2 Tbsp olive oil
- 1 small onion chopped – cut into smaller pieces if you do not plan to blend gravy at the end
- 1 Tbsp fresh minced rosemary or 1 tsp dried, or sub seasoning of choice
- 1 Tbsp fresh minced parsley or 1 tsp dried, or sub seasoning of choice
- 3 Tbsp all-purpose flour can use gluten-free to make recipe gluten-free
- 2 cups vegetable broth
- salt and pepper to taste
Instructions
- In a large sauce pan, cook onion and olive oil on medium-low heat, stirring occasionally, until onion becomes translucent and tender, approximately 15 minutes.
- Add rosemary and parsley (or other seasonings of your choosing) and cook an additional 1-2 minutes on low
- Sprinkle 3 T of flour on top of onions
- Stir in broth and cook until the gravy thickens. Once thick, you can optionally blend the gravy until smooth.
- Add salt and pepper to taste and serve hot.
