Roasted pumpkin seeds have always my favorite part of carving pumpkins. From putting my hands into the pumpkin guts to crunching down on a handful of perfectly seasoned, perfectly crispy roasted pumpkin seeds – I love it all.
You can roast the seeds of any kind of pumpkin, including the big ol’ carving pumpkins. If you are in the habit of throwing away your pumpkin seeds, I beg you to stop and try the simple recipe below!

Step-By-Step Instructions
1. Rinse your pumpkin seeds thoroughly in a strainer. Remove all pumpkin guts.
2. Lay the pumpkin seeds out on a roasting pan and dry thoroughly with a towel. For best results, let seeds sit overnight to dry completely (this will give your seeds the best crunch!)
3. Once seeds are dried, pour into a bowl and mix with olive oil and seasonings of your choice. I prefer a few pinches of salt, garlic powder, and cayenne myself.
4. Spread seasoned seeds onto a single layer on a baking sheet, making sure they are not stacked on top of each other too much
