- 1 tsp Fair Trade coconut oil
- 1/4 cup almonds
- 1 apple cored and diced into 1/2-1 inch pieces
- 3/4 cups water
- 3/4 cups plant-based milk
- 1/2 tsp Fair trade vanilla extract
- 3/4 cups old-fashioned or rolled oats certified gluten-free if preferred
- 2 tsp flax seeds
- 1 pinch salt
- 1 tsp Fair Trade cinnamon
- 1 Tbsp maple syrup
- Additional dairy-free milk (approximately 1/4 cup) optional - add more or less based on preference
In a small to medium pot, heat coconut oil on medium heat.
Add almonds and apples and let cook for 4-5 minutes, stirring frequently.
Once apples have softened, add water, plant-based milk, vanilla extract, and salt to pot. Bring to a boil.
Once liquid boils, turn heat to medium-low and add oats and flax seeds. Cook approximately 10 minutes, stirring frequently, until the liquid is mostly absorbed.
Remove from heat and stir in cinnamon and maple syrup. Cover for 2 minutes.
Serve with additional splash of plant-based milk.
Can make gluten-free by using certified gluten-free oats.
