Ingredients

  • 1 tsp Fair Trade coconut oil
  • 1/4 cup almonds
  • 1 apple cored and diced into 1/2-1 inch pieces
  • 3/4 cups water
  • 3/4 cups plant-based milk
  • 1/2 tsp Fair trade vanilla extract
  • 3/4 cups old-fashioned or rolled oats certified gluten-free if preferred
  • 2 tsp flax seeds
  • 1 pinch salt
  • 1 tsp Fair Trade cinnamon
  • 1 Tbsp maple syrup
  • Additional dairy-free milk (approximately 1/4 cup) optional - add more or less based on preference

Instructions

  • In a small to medium pot, heat coconut oil on medium heat.
  • Add almonds and apples and let cook for 4-5 minutes, stirring frequently.
  • Once apples have softened, add water, plant-based milk, vanilla extract, and salt to pot. Bring to a boil.
  • Once liquid boils, turn heat to medium-low and add oats and flax seeds. Cook approximately 10 minutes, stirring frequently, until the liquid is mostly absorbed.
  • Remove from heat and stir in cinnamon and maple syrup. Cover for 2 minutes.
  • Serve with additional splash of plant-based milk.

Notes

Can make gluten-free by using certified gluten-free oats.
