Winter Pesto

Just because it's winter does not mean we should deprive ourselves of pesto! Try this Winter Pesto, which uses healthy and seasonally available produce for an environmentally friendly meal.

Ingredients

  • 2 cups spinach tightly packed
  • 1 cup parsley loosely packed
  • 1/2 cup walnuts lightly toasted
  • 3 large cloves garlic peeled
  • 1/2 cup extra virgin olive oil
  • 1/2 tsp sea salt plus more to taste

Optional Ingredients

  • 2-3 Tbsp nutritional yeast (or to taste)
  • 2-3 pinches red pepper flakes (or to taste)
  • 1 Tbsp lemon juice (or to taste)

Instructions

  • Add spinach, parsley, walnuts, and garlic to food processor and process until finely minced.
  • Add olive oil, salt, and any optional ingredients and process again until mixture is smooth, scraping down sides as needed. Taste and add additional salt or optional ingredients as desired.
