Instructions
Rinse and cook the quinoa. Let cool.
Seed your pomegranate and set seeds aside. Compost shell.
Mince shallot.
Rinse arugula and place in large bowl. Add cooled quinoa, minced shallot, pomegranate seeds, walnuts. Gently toss.
Set aside portions you want to save for later and refrigerate. Toss in dressing to whatever portion you will be eating right away.
