Healthy Pumpkin Spice Smoothie

Ingredients

  • 1/4 cup roasted almonds
  • 1 cup unsweetened vanilla almond milk
  • 3-4 medjool dates pitted
  • 1/2 cup fresh pumpkin can be substituted with canned pumpkin (not pumpkin pie mix!)
  • 2 pinches Fair Trade cinnamon
  • 2 pinches Fair Trade ginger
  • 2 pinches Fair Trade nutmeg
  • 2 tsp chia seeds
  • 2 handfuls ice

Instructions

  • Roast almonds at 350°F for 10 minutes, stirring halfway. Remove from oven and let cool completely.
  • Combine almond milk and pitted dates in high speed blender. Blend on high until dates are completely blended and no chunks remain.
  • Add pumpkin, roasted almonds, seasonings, chia seeds, and ice, and blend until all ingredients are smooth.
  • Optional: Top with coconut whipped cream and a sprinkle of cinnamon.
